Easy Enchilada Sauce

Serves: 3 cups of medium heat sauce


Ingredients
8 oz Tomato paste
3 cans water (use paste can)
2 Tbsp cornstarch
2 Tbsp Spring Hill Farm Simple Taco/Chili Seasoning

Step by Step Instructions
  1. Mix all of the ingredients in a saucepan and bring to boil over medium heat. Cook for about 2 minutes. Remove from heat and use in any recipe in place of canned enchilada sauce. Before cooking, you may add a finely chopped Chipotle pepper for extra heat. We add a couple of tablespoons to pinto beans mixed with ground beef and brown rice. Roll the mixture in a tortilla and place seam side down in a pan. Cover with remaining enchilada sauce and sprinkle with cheese. Bake until hot and bubbly about 30 minutes at 350 degrees) and serve over shredded lettuce and top with sour cream. One of our favorites!!
