Swedish Potato Pancakes With Chives

<p>A simple, tasty recipe that my 90-year-old Swedish mother still makes today. It can easily be made vegan by using only vegetable oil, but the Swedes do love their dairy products!</p>

Vegan!

Ingredients
4 baking potatoes, peeled
2 T. butter
2 T. vegetable oil
2 T. fresh chives, chopped
2 tsp. salt
1 pinch pepper (or more to taste)

Step by Step Instructions
  1. Grate the peeled potatoes, but do not drain off the accumulating potato "juice". Work quickly to prevent potatoes from turning brown. While you are doing this, begin to heat the butter and oil in a heavy skillet.
  2. Mix potatoes, chives, salt, pepper. Drop by rounded tablespoonfuls into the hot melted butter and oil. Flatten each one with a spatula to about 3 inches in diameter.
  3. Fry for 2-3 minutes per side, until crisp and golden. Serve at once.
