Cucumber Salad

<p>My gr-grandma made this quite often in the summer when the cukes came in. Their farm was in south east Indiana on the Ohio River. I spent a lot of time there when I was a kid.</p>

Serves: 4-6 servings


Ingredients
2-3 Cucumbers, sliced
1 whole lemon, juiced
salt & pepper to taste
1 pkg artificial sweetener
1/2 onion, sliced

Step by Step Instructions
  1. Slice cucumbers and onion into very, very thin slices. I use a grater for the cukes. Add salt and pepper to taste. Toss to mix all.
  2. Place the slices in a colander over a bowl to drain for about 90 minutes.
  3. Squeeze remaining liquid from the cuke mixture and place them in a bowl. Squeeze the juice of the lemon on to the cukes and add packet of sweetener (or teaspoon of sugar) and mix well. Add more sweetener as desired.
  4. Cover and place in fridge to chill. Toss well before serving.
