Crispy Mushroom Fry - King of Morel Recipes

<p>This is one of the simplest morel recipes going, and a great way to enjoy them. Many people make this recipe with flour, but I&#8217;ve used panko breadcrumbs to mix it up and make &#8217;em extra crunchy.</p> <p>Amounts of morels aren&#8217;t listed. Just keep beating eggs and adding more butter to the skillet until the mushrooms are gone, which will be sooner than you want!</p>

Ingredients
1 pkg Morels (the more the better!)
4 ea Eggs, beaten
2 cups Flour or Panko Bread crumbs
4 tblsp butter
1 ea salt and pepper to taste

Step by Step Instructions
  1. Clean the morels. The point is to remove all dirt and bugs without making them too wet. Soggy morels result in a heartbreak not cured by store-bought mushrooms. You can brush them, or use a light rinse and pat dry. In a large bowl, roll the morels in the beaten eggs. Make sure they're fully covered. In a separate bowl mix together the flour/breadcrumbs, salt, and pepper. Dip the egg-covered morels in the flour/breadcrumbs, making sure all surfaces of the mushrooms are covered with the crumbs.
  2. Melt the butter in a large skillet on medium-high heat. Fry the morels until they are brown and crispy on all sides. It's best to do this in small batches, rather than overcrowding your skillet.
  3. Repeat until you're so full that you can't take it anymore, or until you run out of mushrooms.
