Crispy Italian Baked Eggplant

Ingredients
1 large Eggplant (skin on, cut into half inch slices)
Salt
1 cup Bread crumbs covered in Italian seasoning
1/2 cup Grated Parmesan cheese
1/4 teaspoon Paprika
1/2 teaspoon Oregano
1/2 teaspoon Granulated garlic or garlic poweder
1/4 cup Melted butter
1/4 cup Olive oil

Step by Step Instructions
  1. Preheat oven to 400 degrees. Lightly sprinkle salt on both sides of the eggplant slices. Put the salted eggplant slices on paper towel and allow to sit for 30 minutes. Meanwhile, combine breadcrumbs, cheese, and spices in a bowl. In a different bowl, combine the oil and melted butter.
  2. Dip the eggplant slices in the butter and oil mixture, then into the breadcrumb mixture, making sure to evenly coat both sides. Place eggplant slices on a baking sheet that has been lined with parchment paper.
  3. Bake for 15 minutes, then flip onto the other side then bake for another 5 to 10 minutes (they should be nice and crispy when they're finished).
