Lemon Chicken & Rice Soup

Ingredients
2 tablespoons Olive oil
2 pounds Boneless skinless chicken breasts (cut into 1/2-inch pieces)
14 1/2 ounces Chicken broth (store bought or homemade)
8 cups Swiss chard (chopped)
OR kale
OR spinach
2 Carrots (chopped)
1 Onion (chopped)
1 Lemon (halved and sliced)
4 teaspoons Grated lemon zest
1/2 teaspoon Pepper
4 cups Cooked rice

Step by Step Instructions
  1. Heat a tablespoon of oil in a skillet over medium high heat. Brown half of the chicken and transfer it to a 6 quart slow cooker. Repeat with the other half of oil and chicken.
  2. Add the broth, greens of choice, carrots, onion, lemon, zest, and pepper to the slow cooker. Cook the mixture for 4 to 5 hours.
  3. Stir in the rice and heat the mixture through.
