Garlicky Sauteed Sweet Potatoes & Spinach

Vegan!

Ingredients
4 teaspoons Olive oil (divided)
1 Sweet potato (peeled & grated)
2 Green onions (sliced, with green & white parts separated)
3/4 teaspoon Dried thyme
1/4 teaspoon Salt
1/4 teaspoon Pepper
2 cloves Garlic (minced)
2 cups Spinach

Step by Step Instructions
  1. Heat 2 teaspoons of olive oil in a nonstick skillet over medium-high heat. Add the grated sweet potato and white parts of onion. Saute them for 3 minutes, stirring constantly. Stir in the thyme, salt, and pepper.
  2. Add the remaining olive oil, garlic, spinach, and the green parts of onion. Let the mixture continue to cook for 1 minute, still stirring constantly, then serve.
