Garlic & Herb Roasted Carrots

Vegan!

Ingredients
1/2 teaspoon Garlic powder
1/2 teaspoon Oregano
1/2 teaspoon Basil
1/2 teaspoon Parsley
1/2 teaspoon Thyme
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 pound Carrots
2 tablespoons Olive oil

Step by Step Instructions
  1. Preheat your oven to 375 degrees. Lightly oil a baking sheet with cooking spray. Mix the garlic powder, oregano, basil, parsley, thyme, salt and pepper together and set the mixture aside.
  2. Arrange the carrots in a single layer and cook for 20 minutes, then remove them from the oven and coat them in the herb mixture and olive oil. Make sure the carrots are thoroughly coated.
  3. Return the carrots to the oven, once again in a single layer on the baking sheet and let cook for about 15 more minutes.
