Serves: 6

Ingredients
2 tablespoons Fresh blackberries
1/2 cup Fresh blackberries
1/2 cup Chicken broth (divided)
2 tablespoons Brown sugar
2 tablespoons White wine vinegar
1 teaspoon Olive oil
2 cloves Garlic (minced)
3/4 teaspoon Paprika (divided)
1/4 teaspoon Ground cumin
6 Boneless skinless chicken breasts
4 1/2 teaspoons Fresh thyme leaves (minced)
1/2 teaspoon Salt
1/4 teaspoon Pepper
2 teaspoons Cornstarch

Step by Step Instructions
  1. Mash the 2 tablespoons of blackberries. Add 1/4 cup broth, the brown sugar, vinegar, oil, garlic, and 1/4 teaspoon paprika and cumin.
  2. Place chicken breasts in an 11x7-inch baking dish coated with cooking spray, then pour broth mixture over the top of it. Sprinkle with thyme, salt, pepper and remaining paprika. Bake at 375 degrees for 20 to 25 minutes, basting with pan juices occasionally.
  3. Skim the fat from pan drippings. Combine the cornstarch and the remaining chicken broth in a saucepan. Once the mixture is smooth, add the pan drippings and bring to a boil.
  4. Serve the chicken with the gravy and the remaining blackberries.
