Kapia Peppers Stuffed with Feta

Ingredients
4 Kapia peppers
OR other long & sweet peppers
1/3 pound Feta cheese (cut into 1/2 inch strips)
4 cloves Garlic (peeled)
1 Lemon (reserve juice and cut the peel into strips)
4 small Fresh sprigs of parsley
4 small Fresh sprigs of oregano
1/4 teaspoon Pepper
Olive oil (for drizzling)
Bread for serving

Step by Step Instructions
  1. Cut off the tops of the peppers and remove the seeds. Blanch the peppers, garlic, and the lemon in boiling water for 15 minutes.
  2. Remove the now blanched ingredients from the boiling water and let them drain & cool on paper towels. Preheat your broiler on the low setting.
  3. Stuff the peppers with feta, garlic, lemon peel, parsley, oregano, and pepper. Place the stuffed peppers onto a sheet pan and broil for 15 to 20 minutes, turning often.
  4. After allowing the peppers to cool slightly, drizzle them with olive oil & lemon juice. Serve with bread.
