Curry Chicken with Mixed Berries

Ingredients
1 medium sized Onion (chopped)
2 tablespoons Olive oil
1 pound 1 pound boneless skinless chicken breasts (cut into cubes)
1 clove Garlic clove (minced)
2 tablespoons All purpose flour
1 teaspoon Chicken bouillon granules
1 teaspoon Curry powder
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 1/2 cups Water
1/2 cup Heavy whipping cream
1/4 teaspoon Fresh thyme (minced)
1 cup Blueberries
1 cup Blackberries
1 cup Raspberries
2 tablespoons Butter
2 cups Rice (cooked)

Step by Step Instructions
  1. Saute the onion in oil in a skillet. Add the chicken and saute for 4 to 6 minutes. Add garlic and cook for 1 additional minute.
  2. Mix the flour, bouillon, curry powder, salt, and pepper together. Stir this mixture into the skillet, then gradually add the water. Bring to a boil and cook for 1 or 2 minutes. Stir in the cream & thyme and allow them to heat slightly.
  3. In a separate skillet, saute all of the berries in butter before serving them over the chicken & rice.
