Turkey, Turnip and Potato Casserole

Ingredients
1/2 tablespoon Olive oil
3 cups Onion (thinly sliced)
1 cup Carrot (diced)
5 cloves Garlic (sliced)
2 cups Cooked turkey
3/4 pound Turnips ( peeled & cut into 1/4-inch slices)
3/4 pound Potatoes (peeled & cut into 1/4-inch slices)
1 cup Grated cheese such as mozzarella or cheddar
Vegetable cooking spray
3/4 cup Sour cream
1 teaspoon Thyme
2 cups Chicken stock
1/3 cup Whole wheat panko breadcrumbs
Salt & pepper to taste
Salad as a side

Step by Step Instructions
  1. Heat the olive oil in a skillet over medium heat, then add the onion, carrot, and garlic and saute for 20 minutes. Stir frequently.
  2. Layer the turnips, saute mixture, and potatoes in a 13 x 9-inch baking dish that has been coated in the vegetable spray.
  3. Stir the sour cream, salt & pepper, thyme, and chicken stock together. Microwave this mixture on high for 5 minutes, then pour it over the vegetables in the baking pan.
  4. Cover the casserole, then bake it at 425 degrees for 30 minutes. Uncover it, then bake for 30 more. Sprinkle the breadcrumbs and cheese over the casserole and bake for 30 more minutes.
  5. Cut into slices and serve with salad
