Chicharrón Colombiano (Colombian-Style Fried Pork Belly)

Ingredients
3 pounds Pork belly (washed & cut into pieces)
1 teaspoon Baking powder
1/4 teaspoon Baking soda
1/2 teaspoon Salt
2 cups Water
Lime wedges for serving

Step by Step Instructions
  1. Place the pork belly pieces skin side down, then cut 1 ½ inch crosswise cuts on each piece. Do not cut through the actual skin. Rub the pieces with baking powder and baking soda.
  2. Place the pork pieces into a medium sized saucepan, then add the water & salt. Cook over medium-low heat until the water has evaporated. Once this occurs, increase the heat to medium and cook for 15 to 20 minutes
  3. Serve crispy with Lime wedges.
