Ingredients
DRY INGREDIENTS:
1 1/2 cups All purpose flour
1/4 cup White sugar
1/2 cup Brown sugar
1/2 cup Cocoa powder
1 teaspoon Baking powder
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/2 teaspoon Salt
1/2 cup Pecans
1/3 cup Semi sweet chocolate chips
WET INGREDIENTS:
1 Egg (lightly beaten)
1/3 Unsweetened applesauce
1/2 cup Yogurt (vanilla or plain)
1/4 cup Skim milk
1 tablespoon Lemon juice
1 cup Shredded zucchini

Step by Step Instructions
  1. Preheat the oven to 350 degrees and line a muffin pan. Chop up the pecans & the chocolate chips (or blend them somewhat in a food processor) until they reach a consistency you desire.
  2. Whisk the dry ingredients together in a bowl. Whisk the wet ingredients together in a different bowl, then gently mix in the dry ingredients (do not over mix the batter).
  3. Fill the muffin slots 2/3 full and bake for 15 to 20 minutes.
