Herbal Lemonade

Ingredients
4 organic lemons
1/2 Cup raw local honey ( or more to taste)
1 qt strong herbal infusion
3 qts filtered water

Step by Step Instructions
  1. Make a strong herbal infusion: choose favorite herb (lavender, rose, lemon balm, lemon verbena, rosemary, nettles, etc). Bring 1 qt of water to a boil then pour it over 1/2 to 1 oz of fresh or dried herbs. Allow to infuse to 1 hr or more, then strain out the herbs.
  2. Juice the lemons.
  3. In a gallon container, add the herbal infusion, lemon juice and honey (or other sweetener) and stir to dissolve the honey (it helps if the infusion is still warm).
  4. When the honey is dissolved, add the remaining water and refrigerate. Enjoy!
