Mahi Mahi with Nectarine Salsa

Ingredients
1 medium sized Nectarine (peeled and chopped)
1/4 cup Onion (chopped)
2 tablespoons Chopped cucumber
1 tablespoon Minced fresh cilantro
2 teaspoons Jalapenos (seeded & chopped)
2 teaspoons Lime juice
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Hot sauce
2 6 inch Mahi Mahi fillets
1 tablespoon Olive oil
Salt for seasoning

Step by Step Instructions
  1. Stir the nectarine, onion, cucumber, cilantro, jalapeno, lime juice, salt, pepper, and hot sauce together in a bowl. Cover and refrigerate until ready to use.
  2. Drizzle the Mahi Mahi fillets with oil and season with salt. Lightly coat a grill rack and grill the fish over medium heat (or broil in the oven for 3 to 5 minutes per side).
  3. Remove the fish from the heat and serve with the chilled salsa.
