Summer Succotash

Serves: Serves four to six
Vegetarian!

Ingredients
1 1/2 cup onion, chopped
1 cup zucchini, coarsely chopped
3 cups corn
1 cup green beans, blanched and cut in half-inch pieces
1 cup tomatoes, coarsely chopped
2 tsp kosher salt
1/4 tsp ground black pepper
3 TBSP basil, coarsely chopped
3 TBSP cilantro, coarsely chopped
butter (for sautéing)

Step by Step Instructions
  1. In a large skillet or saucepan over medium-high heat, sauté onion in butter until soft, about 2 minutes.
  2. Add chopped zucchini, and sauté 3 minutes.
  3. Stir in corn, green beans and tomatoes.
  4. Add salt, pepper, basil and cilantro.
  5. Heat until mixture is hot.
