Ingredients
8 Cubanelle peppers
1 to 3 cloves Garlic (minced)
3 tablespoons Vegetable oil
1 tablespoon White vinegar
Salt & pepper to taste
Sprigs of fresh parsley for garnish
Crumbled feta for garnish
Bread slices (for serving)

Step by Step Instructions
  1. Heat up the broiler and line a baking sheet. Broil the peppers for 15 minutes.
  2. Remove the peppers from the oven, put them into a bowl and cover them with a lid and let sit for 15 minutes. Once the time has passed, remove the charred outer skins of the peppers. Set the skinned peppers aside in a bowl.
  3. Mix the garlic, oil, vinegar, salt, and pepper together, then pour the mixture over the peppers. Garnish with parsley & feta, let set for a few minutes, then serve on sliced bread or alongside other dishes.
