Balsamic Roasted Rutabagas

Vegan!

Ingredients
4 medium sized Rutabagas (peeled and cubed)
2 tablespoons Olive oil
Salt & Pepper to taste
1 tablespoon Balsamic vinegar

Step by Step Instructions
  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
  2. Gently toss the rutabaga cubes with olive oil, lay them out evenly on the baking sheet and season them with salt and pepper.
  3. Roast the cubes for 30 to 40 minutes, remove them from the oven, and toss them with the balsamic vinegar immediately before serving.
