Serves: 4 cups
Vegetarian!

Ingredients
1/4 Cup cream
1 Tbsp fresh lemon juice
1/2 Tbsp good mustard
1/2 tsp sugar
Salt & pepper to taste
1 lb fresh kolrabi - trimmed,peeled, grated
2 apples cut into matchsticks

Step by Step Instructions
  1. Cut kohlrabi into matchsticks. Whisk cream to soft peaks - this only takes a minute or so, there's no need to use a blender. Stir in the remaining dressing ingredients, the kohlrabi and the apple. Serve immediately.
