Fresh Dill Sandwich Spread

Vegan!

Ingredients
1 can garbanzo beans, rinsed and mashed
alternative 1.5 cups dry garbanzo beans, cooked and mashed
1 stalk celery, diced
1/4 sweet onion, diced
alternative 1-2 green onions, chopped
1 Tbsp lemon juice or white balsamic vinegar
1 Tbsp Veganaise or Nayonaise
1-2 tsp dillweed (chopped if using fresh)
Salt and pepper, to taste

Step by Step Instructions
  1. If using dry beans, rinse, add fresh water to cover 2", bring to boil, turn off and let sit 1hr. Rinse, add fresh water to cover 2", simmer until soft (approx 60min)
  2. Mix all together. Spread thickly on fresh slabs of bread and dive in!
