Feta Cheese, Kale and Red Onions

<p>I make homemade feta cheese and always have lots of kale on hand so I thought I would try this out! Total time 30 minutes.</p>

Serves: 4 Servings


Ingredients
1 lb Kale
1 tsp Extra virgin olive oil
1 cup Red onion, sliced
3 cloves Garlic, minced
salt and pepper to taste
1/3 cup Broth, your favorite chicken, beef or vegetableect
1/4 cup Feta cheese, crumbled

Step by Step Instructions
  1. Bring a large pot of water to a boil.
  2. Put in the kale and cook 2 minutes (it should be bright green), drain immediately, put under cold water
  3. Coarsely chop the Kale.
  4. In the same pan heat the oil and cook the garlic and onions for about 4 minutes until the onions are clear and the garlic is golden.
  5. Add a tbsp of water as you are cooking them and it will steam the onions and keep them soft.
  6. Add kale, salt, pepper half of the feta cheese and the broth.
  7. Crumble the remaining feta cheese over the veggies just before serving.
