Memphis Dry-Rub Mushrooms

From Appalachia Mushrooms

This recipe is an opportunity to explore different mushroom varieties. Oyster mushrooms give a brawny bite, and effortlessly hold the soulful seasoning while getting the crispest, crunchiest edges. Lion’s mane will work for this recipe too; just go for the biggest mushrooms you can find.
Vegetarian!

Mesclun Wrap (gluten-free)

From Farm Where Life is Good

While trying to eat gluten-free for a while, I discovered Brown Rice Tortillas (Food for Life, at the co-op type stores) and have been playing with them a bit. I have come to learn that I like them MORE than flour tortillas for wraps. And now that it is mesclun season (that’s “salad mix” to you and me), I have partaken in the following recipe for lunch just about every day I am home.

Mexican Fried Rice

From Farm Where Life is Good

I had an inspiration the other day with left over rice. My mind when to “fried rice” but my stomach said no to the Asian variety. So I reverted to our stores of canned, frozen, root-cellared produce from last year and concocted a south-of-the-border variety. The “day-old” route allowed it to remain non-sticky!
Vegetarian! Vegan!
